Day 2, Dinner Deconstructed




Tonight we had classic Italian pasta primavera with sauteed vegetables in marinara sauce. We added roasted Italian chicken tenders and topped it with Parmigiano-Reggiano. My children love all the ingredients, minus the marinara sauce so they had a deconstructed version. It was fantastic and gluten free thanks to the brown rice linguine noodles! A side salad of romaine, romas, and cucumbers completed our tour of Italy.

And, today’s total money spent was ~0~! So our grand total thus far stands at $3.43.

  1. Celery soup, chicken salad and kiwi

    It’s crazy how a simple soup of potato and celery can taste so good. Especially after being at the hospital all night. When we got home, Aaron and I completely inhaled all the food! I’m not sure how much our dinner cost but it was good and cheap.
